Mini Halloween Quesadillas

  • Tortillas
  • American Cheese Slices
  • Googly Candy Eyes

Instructions
 

  • 1. Preheat oven to 400 degrees.
  • 2. You can make two Halloween mini quesadillas off two standard 8" tortilla.
  • 3. For the ghost, cut out ghost shapes and 2 small circles for eyes and one for mouth. Lay cheese to fit inside and trim excess.
  • 4. For the Jack O' Lanterns, cut out triangles for eyes and mouth as you'd like. We did two as shown. It helps to use a clean Exacto knife for this step! Lay cheese to fit inside and trim excess
  • For the mummy cut out two circles of tortillas. For one, use a knife or pizza cutter to cut strips. Add cheese to one circle and layer the strips. Keep the top open for eyes.
  • Place your mini Halloween quesadillas on a foil or parchment lined baking tray and bake until cheese is bubbly around 8-10 minutes.
  • Remove and allow to cool slightly before serving. Press down your candy googly eyes on the mummy while the cheese is still warm.

Notes

  • To make the faces, you can use a sharp knife or kitchen shears to cut out the pieces. One other easy way to cut the mummy strips is to use a pizza cutter! We've also used a clean Exacto knife to carve out the pumpkin faces!
  • Since these are "mini", you can get two shapes per regular sized 8" tortillas if you want
  • Once you bake them in the oven, you'll notice a bit of the cheese will spread about. Simply take your kitchen shears and trim off once cooled.
  • Once you've baked for a few moments and it's had time to cool outside of the oven, you can then place your candy googly eyes on the mummy.
