Preheat a skillet on medium/low heat.
In a medium to large mixing bowl add all of the dry ingredients (flour, sugar, baking powder, salt) and mix well.
Add in the wet ingredients (milk, applesauce, vanilla) and mix well.
Lightly oil the heated skillet.
Scoop out a ¼ cup of the batter and pour into the center of the pan. Cook for 30-60 seconds until you start to see bubbles forming on the top of the batter.
Flip over and cook for an additional 30-60 seconds until both sides are golden brown. You may have to cook each side for an additional 30-60 seconds depending on the pan and the temperature.
Place on a serving plate.
Place the chocolate in a bowl and place in the microwave for 30 seconds at a time and stirring after each round until full melted.
To make the pancake tacos simply fold a pancake slightly and add a layer of yogurt, then sprinkle your fruit of choice and drizzle with melted chocolate. Enjoy!
