Ingredients
  

  • 2 eggs
  • 2 TBSP pesto
  • salt and pepper as needed
  • parsley optional
  • 2 slices bread your choice, toasted

Instructions
 

  • Heat a frying pan to medium heat. Add two heaping tablesppons of pesto and spread out with a spoon.
  • Once the pesto starts bubbling from the oil releasing, add two eggs over them, and cook sunny side up on medium heat until your desired yolk softness.
  • While the eggs are cooking, toast your bread. Add to a plate.
  • Slide the eggs over the toast. Add salt and pepper and garnish with parsley (optional).
