- 2 eggs
- 2 TBSP pesto
- salt and pepper as needed
- parsley optional
- 2 slices bread your choice, toasted
Heat a frying pan to medium heat. Add two heaping tablesppons of pesto and spread out with a spoon.
Once the pesto starts bubbling from the oil releasing, add two eggs over them, and cook sunny side up on medium heat until your desired yolk softness.
While the eggs are cooking, toast your bread. Add to a plate.
Slide the eggs over the toast. Add salt and pepper and garnish with parsley (optional).
