Mini Waffle Ice Cream Sandwiches
If you love waffles and ice cream, it’s time to take it up a notch! With just 3 ingredients, this easy, delicious snack will become a delectable dessert staple!
- 12 mini waffles
- 4 cups of ice cream softened
- Rainbow sprinkles
Let ice cream soften and then scoop onto a parchment lined tray and spread smooth.
Set into the freezer overnight.
Put mini waffles in toaster and let cool.
Using a small circle cutter, cut out the ice cream and then place onto one side of the waffle. If you don’t want to cut the ice cream out, you can also just put a small scoop onto each cookie and the press down the ice cream, making a sandwich. Both methods work well!
Roll the ice cream sandwiches in the sprinkles and place in the freezer until they are ready to serve. Make sure your hands are not wet when you are rolling in the sprinkles as it will make the sprinkles’ color bleed.
