Rainbow Ice Cream Cupcakes

It's always a magical day when we get to make and enjoy Rainbow Ice Cream Cupcakes. Find out how to make these easy rainbow cupcakes in a cone with kids for a fun and colorful treat!

Ingredients
  

  • 12 Ice Cream Cake Cones
  • White Cake Mix
  • Vegetable Oil
  • Eggs
  • Gel Food Coloring (red, orange, yellow, green, blue, purple)
  • Whipped Cream  
  • Sprinkles
  • Cherries
  • oven safe cupcake holder or bake the cupcakes in a muffin tin and place cake cakes upside down while baking

Instructions
 

  • Preheat oven to 350 degrees. Mix cake mix according to directions (you'll need vegetable oil, water and eggs). Mix in a large bowl with mixer on medium speed or beat vigorously by hand for 2 minutes. 
    Place 12 flat bottom cake cones into an oven-safe cupcake cone holder. Alternatively, you could bake the cupcakes in a muffin tin and place cake cakes upside down while baking
    Divide your cake batter into 6 small bowls. Add gel food coloring (red, orange, yellow, green, blue and purple), one color for each bowl and then mix.
    Using a spoon, fill the cones with each color about a spoonful each until 2/3 up to the cone. 
    Start with purple in the bottom of each cone, then blue, green, yellow, orange and finally red when filling the cones. Do not full to the top or the cake will overflow.
    Bake for 20-25 minutes or until the tops spring back lightly.
    While they're cooling, mix your whipped cream (if making it fresh) into peaks or use Cool Whip in a pinch if you need something fast.
    Add to a piping bag with a large star tip. Pipe onto each cooled cake cone, add sprinkles and a cherry on top.
