Preheat and Prepare: Begin by preheating your oven to 350°F. Line a baking sheet with parchment paper to prevent sticking.
Roll Out the Dough: Carefully unroll the tube of Pillsbury French bread dough onto a clean surface. Gently press the dough into an even rectangle.Slice Into Strips: With a pizza cutter, slice the dough into 12 even strips width-wise. Shape Into Birds: Take each strip of dough and tie into a simple knot, making sure one end is a bit longer. Roll/fold the longer end into a ball to make the head of the bird. Form the Beak and Feathers: Pinch and twist a small portion of the head to create a beak for each bird roll. Using kitchen scissors, carefully make three small cuts on the opposite end of each dough strip to fashion the tail feathers of your birds. Egg Wash: Place your bird-shaped bread rolls onto the prepared baking sheet. Brush each breadstick with the egg wash for a golden, shiny finish.
Bake Until Golden: Pop the baking sheet into the preheated oven and bake the breadsticks for 12-14 minutes, or until they turn a lovely golden brown color.
Add the Eyes: Melt down some chocolate chips and pour into a piping bag (sandwich baggies work too!). Pipe 2 small dots onto your bird roll faces to create the eyes. Make sure to do this when the rolls are cooled.
