Lasagna Soup Recipe

If you love lasagna you'll dig this hearty soup version minus all the fuss, perfect for a cozy weeknight dinner, ready in under 40 minutes.

Ingredients
  

  • 1 lb lean ground beef
  • 1 lb sweet Italian sausage
  • 2 tablespoon tomato paste
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon garlic powder
  • 2 teaspoon black pepper
  • ½ teaspoon salt
  • 5 oz crushed tomatoes
  • 15 oz tomato sauce
  • 3-4 cups chicken broth
  • ½ heavy cream
  • ½ lb-1lb lasagna noodle, uncooked, broken)
Ricotta Topping (Optional)
  • 8 oz ricotta cheese
  • ½  cup shredded mozzarella cheese
  • ½  cup parmesan, fresh, shredded
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano

Equipment

  • Large stock pot
  • Wooden Spoon
  • Measuring Cups and Spoons

Method
 

  1. In a large stock pot, over medium heat, brown the meat, drain if you need too.
    Add tomato paste, garlic powder, onion powder, oregano, black pepper and salt.
    Stir to coat the browned meat well.
  2. Add in crushed tomatoes and tomato sauce, stirring well.
    Add in the chicken broth (for a soupy consistency add 4 cups, for more of baked lasagna feel, add 3 cups).
  3. Add in the heavy cream and broken lasagna noodles.
    Bring to a boil, siting frequently.
    Once it begins to bubble, reduce heat to medium and continue to stir occasionally for 10-15 mins until the noodles have cooked.
  4. To make the ricotta topping, simply add everything to a bowl and stir.
    Top the soup with the cheese mixture and enjoy.

Notes

You can use group turkey or ground chicken
If you like spicy lasagna, use a hot sausage and add red pepper flakes
