Place a large quart pot over medium-high.
Once hot, add the ground beef, and breaking it with a wooden spoon cook it until browned. Drain fat and return beef to the pot over medium-high heat.
Add taco seasoning, water, salsa, and tomato sauce. Bring the mixture to a boil.
Add uncooked macaroni, stir to combine, and reduce the heat to low. Cover and simmer for 10-15 minutes or until pasta is cooked through. Make sure to stir occasionally.
Remove from heat. Sprinkle the cheeses on top and cover for the cheese to melt.
Garnish with chopped parsley and serve. Enjoy!
