Preparation: Begin by preheating your oven to 400 degrees Fahrenheit.
Butter step: Melt 2 tablespoons of butter in a small pan or microwave.
Puff pastry prep: Take your box of puff pastry and gently unfold the two sheets. It's okay if they're a bit stiff; they'll loosen up as they thaw. You can leave them out of the refrigerator for about 10-15 minutes if they are too stiff. Place one sheet on a lightly floured surface or between two sheets of parchment paper. Roll the sheet out a bit to thin out. Repeat with the other sheet.
Cinnamon sugar: In a small bowl, mix ¼ cup of sugar and 1 tablespoon of cinnamon.
Brush butter: Brush melted butter over one sheet and sprinkle the cinnamon sugar mix over evenly. Place the other sheet on top. Crimp the edge with a fork to seal.
Cut the pastry: Use a pizza slicer or sharp knife to cut the pastry into slices about ½" wide.
Shape the bunnies: Grab the two ends and make a twist at the top and a second twist to make the ears. Place 2" in apart on a parchment lined baking sheet.
Bake: Bake in the oven for 15-18 minutes, or until the pastries are puffed up and golden brown.
Whipped cream: Once baked, let your bunnies cool. Add a dollop of Cool Whip, whipped cream or frosing to each bunny to create a fluffy "tail." Sprinkkle some pastel Easter sprinkles over the tails.
