Blueberry Peanut Butter Chocolate Bark

Ingredients
  

  • Fresh, washed and dried blueberries (left whole)
  • 1 cup peanut butter, melted
  • 12 oz chocolate candy melts
  • Parchment paper

Method
 

  1. Prep Your Ingredients
    Rinse your blueberries and pat them completely dry with a paper towel. Leaving them whole gives this bark a juicy pop in every bite and makes prep super simple.
  2. Arrange the Blueberries
    Line a baking sheet with parchment paper. Spread the whole blueberries evenly across the parchment, making sure they’re in a single layer.
  3. Pour on the Peanut Butter
    In a microwave-safe bowl, melt about 1 cup of peanut butter until smooth and pourable. Pour the melted peanut butter evenly over the blueberries, then use a spatula or the back of a spoon to gently spread it into an even layer, covering as many blueberries as possible.
  4. Melt the Chocolate
    Melt your chocolate candy melts according to the package instructions. Once smooth, pour the melted chocolate over the peanut butter layer. Spread it evenly, filling in any gaps and creating a smooth top layer.
  5. Freeze It
    Place the baking sheet in the freezer and let the bark set for about 1 hour, or until completely firm.
  6. Step 6: Break or Slice and Serve
    Once frozen, remove the bark from the freezer. Use a sharp knife to cut it into pieces, or break it into rustic chunks by hand.
