Easy Two Ingredient Blueberry Bagel Recipe

These Two-Ingredient Blueberry Bagels are an easy homemade breakfast or snack idea you can make in under 30 minutes.

Ingredients
  

  • 2 ½ Cups Self-rising flour
  • 2 Cups Greek Yogurt We used 0% Fage, strain as much liquid as possible
  • 1 Cup Fresh Blueberries washed, drained and dried
  • 1 Large Egg Whisked
  • ¼ teaspoon Kosher salt

Method
 

  1. Preheat oven to 375 degrees.
  2. Mix yogurt, flour and salt with a spatula or spoon, the mixture is kind of sticky. Kneed it a few times inside the bowl.
  3. Add your blueberries, lightly mix with a spoon or spatula, you don't want mashed berries.
  4. Take dough out on a board, flour lightly separate into 8 even balls.
  5. For each ball, roll gently into a log about 7" long.
  6. Then connect that log so it forms a circle with the hole in the center. The circle diameter is about 3".
  7. Place all bagels on a parchment lined baking sheet. You should be able to fit 8 on a 9" x 13" baking pan.
  8. Before baking brush tops and side of each bagel with egg wash.
  9. Bake in a preheated 375 degree oven for about 18-20 minutes or until golden. If you find the tops are still not golden at the end of baking time place under broiler for a couple of minutes then remove

Notes

  • These bagels have a texture that is more like bread so be aware of that when you make them. We love to cover them with cream cheese or drizzle them with honey to create a truly simple and easy snack.
  • You also might notice a slight "tang" when you first take a bit of these bagels but that is just from the addition of the Greek yogurt. This is where the importance of toppings really does matter!
  • If they are not browning on top and still pale after they are done baking, do put the under the broiler for a couple of minutes to get that brown baked-in bagel look.
