Egg Toast Sandwich Hack

This one pan egg toast hack makes a flavorful sandwich coated on all sides with eggs! Pair the inside with any number of delicious fillings.

Ingredients
  

  • 2 large eggs
  • Chopped chives (optional for added flavor)
  • 1 slice of bread, halved 
  • Butter (to grease your pan)
  • Fillings of your choice (ham, cheese, avocado, bacon, etc.)

Method
 

  1. Prep the Pan: Heat a non-stick pan over medium heat and add a teaspoon or two of butter, letting it melt and coat the surface.
  2. Beat the Eggs: In a bowl, crack two eggs and whisk them together. If you like, toss in some finely chopped chives for an herby kick. Salt and pepper to taste.
  3. Pour and Cook: Pour the beaten eggs into the pan, spreading them out to form a thin, even layer.
  4. Add the Toast: Before the eggs set completely, place the two bread halves on top of the eggs, close together to form one whole piece. Just enough to coat with egg, then quickly flip them over so the other side gets egg on top Cook the eggs until almost done. 
  5. Fold It: Use a spatula to fold the excess egg over the edges of the bread, forming a perfect square shape.
  6.  Add Fillings: add fillings on both sides – a slice of ham, a sprinkle of cheese, some avocado slices, or crispy bacon.
  7. Make the Sandwich: Fold the other half of the egg toast over the fillings, pressing down gently to seal everything together.
  8. Repeat: If you're making more, simply repeat the process with new eggs and bread.
