Pencil Cupcakes

These pencil cupcakes are a festive teacher treat to show appreciation or a fun back to school dessert Simply decorate wafer cookies as pencils and place on top of frosted cupcakes.

Ingredients
  

  • Cake mix (plus ingredients for the mix) or homemade: You can use any flavor; we used vanilla. 
  • Cupcake linersFrosting: Vanilla or white frosting (store-bought or homemade)
  • Wafer cookies: To simulate the wooden part of the pencil.
  • Mini chocolate chip: This will represent the pencil lead.
  • White cookie icing (or melted white chocolate wafers): For the front of the pencil. 
  • Pink cookie icing (or melted pink wafers): for the eraser. 
  • Sprinkles: Optional, to add some color. We added pink sparkling sugar.

Method
 

  1. Step 1: Bake the CupcakesPrepare the cake mix according to the package instructions.Pour the mix into cupcake liners in a muffin tin.Bake as directed on the box. Once done, allow them to cool completely before decorating.
  2. Step 2: Decorate with FrostingApply vanilla or white frosting on each cupcake. We used a large star baking tip but you can do a swirl with a spatula if you don't have one. 
  3. Step 3: Create the Pencil DesignCut the wafer cookies.
    First, cut the cookie length to ⅔ so it can fit on top of the cupcakes. Then cut one end into a triangle for the pencil tip.  
    Use your white icing to fill in the triangle. 
    Add a mini chocolate chip at the very tip to represent the lead.
    Decorate the opposite end of the wafer cookie with pink icing to mimic the eraser. 
    Sprinkle some decorative sprinkles around the frosting.
