With Teacher Appreciation Week this week we are showing gratitude to our teachers with these cute pencil cupcakes! We've made wafer pencils before for back-to-school and decided to add them to cupcakes for a fun twist!
My 6-year-old son @DashBakesTheGreats surprised his Kindergarten teacher with these adorable pencil-shaped cupcakes and she was delighted! These school-themed treats are so fun and easy to make with a few simple ingredients. How to make pencil cupcakes for teacher appreciation week or back-to-school
Step 1: Bake the Cupcakes
- Prepare the cake mix according to the package instructions.
- Pour the mix into cupcake liners in a muffin tin.
- Bake as directed on the box. Once done, allow them to cool completely before decorating.
Step 2: Decorate with Frosting
- Apply vanilla or white frosting on each cupcake. We used a large star baking tip but you can do a swirl with a spatula if you don't have one.
Step 3: Create the Pencil Design
- Cut the wafer cookies. First, cut the cookie length to ⅔ so it can fit on top of the cupcakes. Then cut one end into a triangle for the pencil tip.
- Use your white icing to fill in the triangle.
- Add a mini chocolate chip at the very tip to represent the lead.
- Decorate the opposite end of the wafer cookie with pink icing to mimic the eraser.
- Sprinkle some decorative sprinkles around the frosting.

Final Thoughts
These pencil cupcakes are a perfect project for kids and parents to make for teachers as a sweet treat to show appreciation. Easy to assemble with readily available ingredients, they make a festive treat during Teacher Appreciation Week or a fun surprise for a back-to-school event. Enjoy baking, decorating, and sharing these creative cupcakes!
