Method
- Heat a frying pan to medium heat. Add two heaping tablesppons of pesto and spread out with a spoon.
- Once the pesto starts bubbling from the oil releasing, add two eggs over them, and cook sunny side up on medium heat until your desired yolk softness.
- While the eggs are cooking, toast your bread. Add to a plate.
- Slide the eggs over the toast. Add salt and pepper and garnish with parsley (optional).
