Preheat your oven to 400 degrees. Cut each biscuit round into 6 pieces.
In a large bowl, combine the biscuit pieces, olive oil, shredded mozzarella, mini pepperoni, and garlic powder. Mix well to ensure each piece is coated with the flavors.
Grease your 12-cup muffin tin and evenly distribute your pizza muffin mixture into each cup. Before placing them into the oven, give the tops a light brush with some extra olive oil.
Bake for about 15 minutes or until you see the tops turn golden brown. Once out of the oven, let them cool for a few minutes before sprinkling some dried parsley for garnish.
Serve them up with a side of marinara sauce for dipping and watch them disappear!
