St. Patrick's Day Fruit and Veggie Tray

This colorful St. Patrick's Day Fruit and Veggie Tray is a healthy snack to celebrate St. Patty's Day with the kids and is perfect to fuel up with before caching leprechauns!

Ingredients
  

  • strawberries sliced
  • red, yellow and green bell peppers
  • mango chunks
  • orange slice mandarin
  • pineapple chunks
  • broccoli small florets
  • blueberries
  • blackberries
  • purple grapes sliced in half
  • cauliflower two large pieces for clouds

Instructions
 

  • Arrange your fruits and veggies in rainbow order as shown in the photos.
  • Add two large cauliflower florets on either end as "clouds."
  • Cut shamrock shapes out of green bell peppers.
  • Cut circles out of yellow bell peppers to make "coins."
  • Layer the shamrocks and coins around the bottom of the rainbow.
