Who doesn't love a fun excuse to "eat the rainbow?" This healthy spread is great to encourage kids to try out new fruits and veggies or to get them to eat more healthy snacks.


How do you make this fruit and veggie tray St. Patrick's theme?
First we made a rainbow out out of fruits and vegetables like strawberries, red bell peppers, mango, oranges, pineapple, broccoli, blueberries, blackberries, and grapes.
We then cut "gold coins" out of yellow bell peppers and shamrocks out of green bell peppers.
Sound easy? Yes because it truly is! Encouraging kids to eat healthier can sometimes be a matter of presenting healthy foods in a fresh, cute and fun way!



What can I serve with this St. Patrick's Day Fruit and Veggie Tray?
Since there are BOTH veggies and fruits in this St. Patrick's Day board, you can serve a sweet and savory dip. Like Ranch dressing and hummus for the veggies and a yogurt fruit dip.
My kids like munching on plain fruit and sometimes just like a drizzle of honey.
Creating a fruit and veggie board is a fun way to get kids involved in the kitchen.
Depending on how hold your children are, creating fruit and veggie trays are fun ways to give a chance in making food and creating too!
They can wash, dice and chop if they are older. Or they can arrange the pieces or even come up with their own cute food art!

Method
- Arrange your fruits and veggies in rainbow order as shown in the photos.
- Add two large cauliflower florets on either end as "clouds."
- Cut shamrock shapes out of green bell peppers.
- Cut circles out of yellow bell peppers to make "coins."
- Layer the shamrocks and coins around the bottom of the rainbow.
