Slice your apples at least ½" thick. Soak in lemon water if you aren't going to eat them right away.
Stick your lollipop stick on the bottom of the apple slices. It helps to have a somewhat sharp object like a chopstick first make an small indent so you can easily push the lollipop stick inside.
Using your melted chocolate as "glue" just a toothpick to help adhere the candy eyes and nose.
Using the same method to add the lollipop stick, do the same for the two ears and then insert half a pretzel into each ear.
Use the melted chocolate and toothpicks to add the mini M&M's to the ears.
