St. Patrick's Day Fruit and Veggie Tray

This colorful St. Patrick's Day Fruit and Veggie Tray is a healthy snack to celebrate St. Patty's Day with the kids and is perfect to fuel up with before caching leprechauns!

Ingredients
  

  • strawberries sliced
  • red, yellow and green bell peppers
  • mango chunks
  • orange slice mandarin
  • pineapple chunks
  • broccoli small florets
  • blueberries
  • blackberries
  • purple grapes sliced in half
  • cauliflower two large pieces for clouds

Method
 

  1. Arrange your fruits and veggies in rainbow order as shown in the photos.
  2. Add two large cauliflower florets on either end as "clouds."
  3. Cut shamrock shapes out of green bell peppers.
  4. Cut circles out of yellow bell peppers to make "coins."
  5. Layer the shamrocks and coins around the bottom of the rainbow.
