- Corn Tortilla
- Eggs
- Shredded Cheese
- Salt and Pepper to taste
- Avocado
- Salsa or Pico De Gallo
Add oil to a pan and coat both sides of the tortillas. Cook them on low to medium heat until the tortillas start to get slightly crispy. Add egg onto tortilla. Add a splash of water to the pan, cover, and cook until the whites of the egg are almost set and not runny, 4-5 minutes.Sprinkle on cheese, cover again and cook until the whites of the egg are fully set, but the yolk is still a little runny. Add sliced avocado and salsa or any of your favorite toppings.Dash of salt and pepper.Remove from the pan, fold into a taco shape and enjoy!
