Start by cutting fresh watermelon into bite-sized cubes. Make sure to remove any seeds if necessary. This step is a great way to involve the kids!
Once you have your watermelon cubes ready, place them in a blender or food processor. Blend until you achieve a smooth, juicy consistency. For a tangy sweet twist, add half a lime and a tablespoon of maple syrup.
Peel and dice your kiwi fruit and place them in a blender or food processor as well. Add the other half of the lime and a tablespoon of maple syrup if you wish.
Carefully pour the watermelon mixture into the Dixie cups, filling them about ⅔ of the way full. Freeze just until you can insert a popsicle stick upright and then pour the kiwi mixture to the top.
Return the Dixie cups to the freezer and let them chill for at least 6 hours, or until completely frozen. Once your watermelon pops are fully frozen, it's time to enjoy!
To remove the popsicles from the Dixie cups, simply run them under warm water for a few seconds. The gentle heat will loosen the popsicles, allowing you to slide them out easily. Or you can leave them out for a few minutes and pull them out.
