Are your kids excited to watch the solar eclipse on April 8, 2024? My kids will be watching at school and are super excited! It’s my two older kids’ second time seeing a solar eclispe as the last one was in 2017! This will be only the 2nd time in the 21st century that a solar eclipse will be happening in the United States! Since my 6-year-old @DashBakesTheGreats was too young to view the first one he was extremely excited to make these solar eclipse treats to celebrate! These sun and moon cupcakes are just too adorable and the best part is that they come together quickly if you’re looking for a last-minute solar eclipse food!

Solar Eclipse Cupcakes – Ingredients:

  • Ready-made plain cupcakes (use a cake mix or your favorite recipe) We baked plain vanilla ones.
  • Ready-made vanilla white frosting (store-bought is fine!)
  • Blue gel food coloring 
  • Oreo cookies
  • Yellow fondant
  • circle cookie cutter (sized to fit the top of your cupcakes generally 1 – 2″ works!)
  • Yellow candy corn*

*Note we were lucky to find pastel yellow candy corn on sale right after Easter! You can use regular orange candy corn. OR you can take a candy that is easy to cut like a yellow Starburst and cut into mini triangles.

How to make Solar Eclipse Treat – Cupcakes

  • Tint your frosting blue. If you want a deeper color add a bit of purple and red
  • Frost the top of your cupcakes with an offset spatula. The blue is the sky.
  • Roll out your fondant and cut circles.
  • Place a circle on top of your frosted cupcake. This is your sun. 
  • Place an Oreo cookie overlapping the yellow fondant. 
  • Add yellow candy corn around the yellow for the sun’s rays.
