How To Make Bunny Cupcakes – Easter Treat

  1. Prepare the Grass: While your cupcakes are cooling, place shredded coconut in a plastic bag and add a few drops of green food coloring. Seal the bag and shake it vigorously until all the coconut is evenly colored.  Kids especially love shaking the coconut “grass!”
  2. Frost the Cupcakes: Once the cupcakes are cool, spread a layer of frosting on top. This doesn’t have to be super generous unless you love frosting nor does it need to be pretty since it will be covered. Then, dip the frosted tops into the green coconut, pressing slightly to make sure it sticks.
  3. Make the Bunny Parts:
    • For the tail, roll small rounds of white fondant.
    • For the paws, roll out some white fondant and cut out oval shapes. Use a little bit of pink fondant to create the paw pads and attach them to the white ovals with a dab of frosting. Arrange two paw prints on each cupcake, pressing them into the coconut grass near the tail.
    • Cut half a marshmallow in half and use a dab of frosting to add to the grass above the paws. Finish with your fondant round tail.

Tips for Baking with Kids:

  • Let the little ones help with pouring and mixing the cupcake batter, shaking the coconut, or placing the bunny paws and tails on the cupcakes.
  • Let them play with fondant! It’s basically like edible play dough!
  • Embrace the mess: Baking with kids can be messy, but it’s all part of the fun. Wear aprons, and keep wet wipes handy for quick clean-ups.
