My son Dash Bakes The Greats‘ little secret is out, there’s no ice cream in this recipe! This dessert takes some time to make as there are several steps, but they’re worth every minute of making, baking, and waiting to taste. 

How do you bake the rainbow cupcake cones without a mess?

We baked these right in one of our favorite kitchen products, the @wiltoncakes cupcake cones baking rack, a 12-cavity cone holder. It’s similar to a cooling rack, but each space holds a standard cone upright and it’s oven safe. The rack makes it easy to display and serve for birthday parties, cookouts and after-school treats.

Is this Rainbow Ice Cream Cupcakes recipe easy for kids to make?

The best part, the layers of colored cake batter don’t have to be perfect when filling the cones. It was easy for Dash to make the cake batter, mix in the gel food coloring and fill the cones with each color. He needed help with the piping of the whipped cream on top but that’s all. The rest was quite easy for him, especially the taste testing of the whipped cream!

What are some substitutions for the whipped cream topping?

Although it’s delicious, there are certainly other options for the topping. Some other ideas include chocolate frosting, strawberry buttercream, white buttercream, or even a whipped cream frosting that uses cream cheese as the base. 

Can you use other toppings?

Absolutely! The possibilities are endless to top your rainbow ice cream cupcakes, drizzled chocolate or hot fudge, nonpareils, chocolate or colored sprinkles, mini chocolate chips, rainbow sour candy, crushed peanuts, m&m mini candies, crushed birthday cake oreos, and so much more. You could even use a variety on each, maybe 3 with sprinkles, 3 with mini chocolate chips, 3 with cherries and 3 with a combination. 

How do you make Rainbow Ice Cream Cupcakes?

Preheat oven to 350 degrees. Mix cake mix according to directions. Mix in a large bowl with mixer on medium speed or beat vigorously by hand for 2 minutes. 

Place 12 flat bottom cake cones into an oven-safe cupcake cone holder. Alternatively, you could bake the cupcakes in a muffin tin and place cake cakes upside down while baking

Divide your cake batter into 6 small bowls. Add gel food coloring (red, orange, yellow, green, blue and purple), one color for each bowl and then mix.

Using a spoon, fill the cones with each color about a spoonful each until 2/3 up to the cone.  

Start with purple in the bottom of each cone, then blue, green, yellow, orange and finally red when filling the cones. Do not fill to the top or the cake will overflow.

Bake for 20-25 minutes or until the tops spring back lightly.

While they’re cooling, mix your whipped cream (if making it fresh) into peaks or use Cool Whip in a pinch if you need something fast.

Add to a piping bag with a large star tip. Pipe onto each cooled cake cone, add sprinkles and a cherry on top.

12 Ice Cream Cake Cones

White Cake Mix

Vegetable Oil

Water

Eggs

Gel Food Coloring (red, orange, yellow, green, blue, purple)

Whipped Cream Topping

Sprinkles

Cherries
