If you love waffles and ice cream, it’s time to take it up a notch with Mini Waffle Ice Cream Sandwiches! This is a super easy frozen summer treat for kids. With just 3 ingredients, this easy, delicious snack will become a delectable dessert staple!

Waffles are one of my favorite things to eat for breakfast; they’re warm, fluffy, and topped with syrupy goodness. It doesn’t get much better than that – except when I let you in on a little secret. Just like people put the chicken on waffles, you can do the same with ice cream!

The “little” secret to this fantastic dessert is that the waffles aren’t huge – they’re mini, which means that they are the perfect bite-sized treat for kids! I personally love this recipe because I can quickly make it on the weekend for the kids as an easy treat, and it’s totally customizable according to your personal preferences. If you don’t want to add sprinkles, throw on some crushed-up candies or nuts on the side to make it perfect for your or your family’s palette. 

Whether you’re home on a Saturday night and need a quick dessert or you have no idea what to bring to a party, this dessert hits a home run with any occasion!

What You’ll Need to Make Mini Waffle Ice Cream Sandwiches

  1. 12 mini waffles
  2. 4 cups of ice cream softened
  3. Rainbow sprinkles

How to Make These Frozen Waffle Treats 

  1. Let ice cream soften and then scoop onto a parchment lined tray and spread smooth.
  2. Set into the freezer overnight.
  3. Put mini waffles in toaster and let cool.
  4. Using a small circle cutter, cut out the ice cream and then place onto one side of the waffle. If you don’t want to cut the ice cream out, you can also just put a small scoop onto each cookie and the press down the ice cream, making a sandwich. Both methods work well!
  5. Roll the ice cream sandwiches in the sprinkles and place in the freezer until they are ready to serve. Make sure your hands are not wet when you are rolling in the sprinkles as it will make the sprinkles’ color bleed.
  6. Enjoy!

Can I use homemade mini waffles?

Of course! I always love a good homemade waffle compared to store-bought. It depends on how quickly you want to make these, but homemade is always a great alternative. If you need a good mini sized waffle pan, check out the one we used to make our waffle pancake cereal!

How can I jazz this up?

If you’re a fan of nuts like me, you could definitely replace the sprinkles with peanuts! You could also use crushed up M&M’s, Reese’s peanut butter cups, or a Heath bar!

How many does this serve?

ONE. Just kidding. It serves 12 but if you eat all of them in one sitting, I wouldn’t blame you because they’re just so darn good.
