We love a good ramen noodle hack and the foodies over TikTok are giving us yet another reason to try a new way to eat soup noodles. What we love about this easy Mayo Ramen Noodle Hack is that it requires very few ingredients, but elevates your standard instant broth into a delicious and creamy base. If you’ve had real ramen at some of the best Japanese ramen noodle houses, you’ll know what we mean by creamy base. Although instant ramen won’t ever get to that standard, this easy trick is as close as you’ll get for just a couple of bucks!

What do you need to make Mayo Ramen?

You will need instant ramen (noodles + seasonings), an egg, Japanese mayonnaise Kewpie brand, and garlic. Regular mayo would work just fine. We garnished with parsley because that’s what we had but you could easily use green onions, chives or whatever herbs you have on hand. You’ll mix the eggs with seasonings and mayo to create an emulsification that once mixed with the noodle broth, creates a delicious creamy texture. The concept is similar to carbonara which is why this ramen trick is also trending as TikTok Carbonara Ramen. 

Where did this noodle ramen trick originate from?

According to America’s Test Kitchen, the original source came from popular YouTube channel Way of Ramen. Note, the recipe there calls for granting fresh garlic, but we used minced garlic and it worked fine as a substitute. As with many TikTok food trends, the inspiration for recipes is often from an original web source, so we are grateful for America’s Test Kitchen for letting us know about this ramen mayo and where it came from.

What is Japanese Mayonnaise?

The original inspiration for this recipe called for using Japanese mayonnaise like Kewpie which is according to their website has a “rich and creamy texture made from egg yolks and a unique blend of vinegars…this “umami” style mayonnaise has a refreshing aroma and a tangy depth of taste.” 

Mayonnaise is already made with eggs, oils and some types of vinegar or acid, so we can only assume this Japanese brand is recommended for its superior quality and ratio of ingredients used. 

What can I add to this creamy carbonara like ramen?

  • Veggies like steamed spinach, mushrooms, brocolli

  • Soft boiled egg

  • Tofu

  • Fish cakes

  • Meats or protein like shredded chicken, or thinly sliced beef. Chinese BBQ pork like Char Siu would be amazing. Or pork belly.

Ingredients
  

  • 1 package Instant ramen Including the seasoning pack that comes in it
  • 1 TBSP Japanese Mayo (like Kewpie) You can substitute regular mayo
  • TSP Minced garlic Or grate a single clove
  • Garnish like parsley, chives, green onions (optional) 

Instructions
 

  • Boil your ramen according to the package instructions.
  • In a bowl crack your egg, add the mayo, garlic, ramen seasoning packet and mix well.
  • Add broth to your egg/mayo mixture and then noodles. Garnish with parsley or other herbs or greens if you'd like.
