Lollipop lollipop Oh lolli lolli lolli, Lollipop lollipop! The family is going to love this easy and delicious breakfast. Today we’re making easy cinnamon roll pancakes in lollipop form and they’re sweeter than sweet. If your family is a fan of cinnamon rolls and pancakes, this recipe is for you!

Who inspired us to make these cinnamon roll pancakes?

We came across Rollin’ Cinnamon Pancakes on Chef Club Network online and although theirs looks absolutely delicious, their recipe is truly homemade (aka is not a quick breakfast!). We wanted to save some time and make breakfast a little easier so we used refrigerated cinnamon rolls and a pre-made pancake mix that we just had to add water to. Just two ingredients is all you need to make these crazy delicious recipe that takes cinnamon rolls to the level! 

We also made a quick powdered sugar vanilla glaze because in our opinion, cinnamon rolls are nothing without the glaze! This is optional however, you could just drizzle syrup over the pancake rolls.

Are there substitutions you can make to this cinnamon roll pancakes recipe?

Although our inspiration for these made them with whole cinnamon rolls, we decided to make ours half size, but still big enough for the little ones to enjoy. We were then also able to get double the number of servings. You could make these homemade, but we used our favorite cinnamon rolls and a buttermilk pancake mix, so knew they would also be delicious.

You could make a thicker glaze for the top, use store-bought caramel topping or even cream cheese frosting.

We added some butter to the pan to give them some extra flavor and better texture. Be sure to cook the cinnamon rolls the full amount of time as to make sure both the pancake and cinnamon roll have had a chance to cook thoroughly. 

Cinnamon Roll Pancakes – Ingredients:

Refrigerated Cinnamon Rolls

Pancake Mix (buttermilk, just add water or milk)

Water

Wooden Skewers

Cinnamon Roll Glaze:

1 cup confectioners sugar, sifted

1/2 teaspoon salt

2 tablespoons unsalted butter, melted

2 tablespoons whole milk

1 teaspoon pure vanilla extract

How do you make pancake cinnamon rolls?

Step 1. Make your pancake batter, according to package directions and make the cinnamon roll glaze and set both aside.

Step 2. Preheat your pan on the stove at medium heat. 

Step 3. Unroll your cinnamon roll and folding it in half lengthwise, cut into 2. 

Step 4. Roll both back into cinnamon roll shape starting in the center, but leaving room in the center to fill with the pancake mix.

Step 5. Place skewer through bottom, center and top of the cinnamon roll, making sure the 1″ space remains for the batter. 

Step 5. Place skewered cinnamon roll into hot pan, fill inside space of cinnamon roll with pancake batter, about 3/4″ full. 

Step 6. Pour about 2 tablespoons water into the pan on the outside of the cinnamon roll and cover pan with lid.

Step 7. Cook for 3-4 minutes.

Step 8. Flip over cinnamon roll pancake once the underside is browned. Add another 2 tablespoons water and cook the other side until also golden brown. 

Step 9. Remove from pan, plate and drizzle cinnamon roll glaze over the top.

How do you make glaze for the cinnamon roll pancakes?

We use this easy vanilla glaze recipe. Just stir sugar and salt together in a small bowl. Whisk together butter, milk, and vanilla and stir into sugar until mixture forms a smooth glaze. Keep glaze at room temperature until you’re ready to drizzle on cinnamon roll pancakes. Whisk until smooth before drizzling.
