I’ve been a huge fan of Oreos and ice cream ever since I was little. However, I never thought to combine them! This Oreo Cookie Ice Cream Sandwich recipe combines two classic childhood desserts that are sure to hit a home run with the fam! We love these mini bite-sized desserts that make the perfect cute and easy frozen treat for kids. 

If you know me, you know I can’t resist an easy dessert. I love baking various desserts such as scones and cookies, but if I can make it in 10 minutes, I’m all for it! The best thing about this recipe is that almost ANYONE will love it. Most people love Oreos and ice cream, so it’s basically a win-win!

Another amazing thing about this dessert food hack is that it’s so customizable to whatever your preferences are! If you don’t like basic vanilla ice cream, you can spring for the chocolate, strawberry, rocky road – you name it! Also, you don’t have to stick with sprinkles if they’re not your favorite. Try combining other small sweets on the side such as crushed up Reese’s peanut butter cups or a crushed Heath bar!

How to Make Oreo Cookie Ice Cream Sandwiches

  1. Let ice cream soften and then scoop onto a parchment-lined tray and spread smooth.
  2. Set into the freezer overnight.
  3. Using a small circle cutter, cut out the ice cream and then place it onto the Oreo cookies that have been separated and the icing removed. If you don’t want to cut the ice cream out, you can also just put a small scoop onto each cookie and then press down the ice cream, making a sandwich.
  4. Roll the ice cream sandwiches in the sprinkles and place them in the freezer until they are ready to serve.
  5. Enjoy!

Yes! If you’re not a huge fan of the classic chocolate Oreos, feel free to use whatever flavor you like. Vanilla would be a great one to use!
