These Cactus Kiwi Fruit Ice Cream Cones are a healthier summer treat for kids than traditional ice cream!
It’s been so hot these summer days, my kids have been begging for ice cream every single day. I often say yes, but then feel guilty for caving in to sweet treats all the time. Cue these cute cactus kiwi fruit ice cream cones as a healthier fruit snack alternative!
I’m not against ice cream, but having a cone each day isn’t the healthiest. Both the kids and I know that! Part of the fun of summer is about indulging in summer treats, but also healthy snacking.
So as a compromise, I made them ice cream. Here’s the catch, though. This ice cream is mainly ALL fruit. Kiwi fruit to be exact, shaped to look like a cactus plant!
The only sweet is the slight dose of sprinkles on top and a little candy flower, which you can definitely omit to make this healthier ice cream version even healthier!
How to make healthy kiwi fruit ice cream.
First we skinned a kiwi and kept its rounded shape. Then we simply inserted it into an ice cream cake cone.
You’ll then add some sprinkles to resemble cactus spines.
The slight stickiness of the fruit allows the sprinkles to adhere to the cactus so that works just fine as a “glue” as long as you eat it soon after making.
Stick on a candy flower the same way (optional).
My kids loved this healthier ice cream treat almost as much as the real thing!
This would be a fun dessert for a summer party or one that’s fruit or cactus themed!

Instructions
- Peel the skin from your kiwi fruit.
- Insert one peeled kiwi onto one cake ice cream cone.
- Add sprinkles around the peeled kiwi fruit.
- Add one candy flower to the peeled kiwi fruit on top.
