These Lucky Charms Cupcakes Are The Perfect Magical Treat

We tried the new Lucky Charms Cupcake kit and give it two thumbs up for taste and ease. They also make the perfect St. Patrick’s Day treat!

Since Lucky Charms also just came out with their new Lucky Charms Pancakes we couldn’t resist testing our luck and also making the new Betty Crocker Limited Edition Lucky Charms cupcakes from their new cupcake kit. We’re happy to say, they’re also very easy to make and met our expectations. Plus you only need 3 additional ingredients beyond what’s already included in the kit. Score for an easy St. Patrick’s Day potluck or party.

What do I need to make the Lucky Charms cupcakes?

You will need the Lucky Charms Cupcake Kit (which includes Frosting, Cereal Toppings, Cupcake Mix and Cupcake Liners), 1/2 cup water, 3 tablespoons vegetable oil, and 2 eggs.

How many cupcakes does the Cupcake Kit make?

One box kit makes 12 regular-size cupcakes. You could also probably bake them up into one 9″ round cake pan. 

How do I make these magically delicious cupcakes?

Heat oven to 350 degrees for aluminum pan or 325 degrees for nonstick pan. Place paper baking cups in 12 regular-size muffin cups.

Stir Cupcake Mix, water, oil and eggs in large bowl vigorously by hand 2 minutes.

Divide batter among muffin cups (about 3 tablespoons each). Bake 15 to 20 minutes or until toothpick inserted in center comes out clean.

Cool 10 minutes; carefully remove from pan. Cool completely before frosting. Squeeze the frosting pouch for 10 seconds to soften (do not microwave pouch).

Cut 1/2″ tip from corner of frosting pouch. Squeeze about 2 teaspoons frosting on each cupcake; spread. Immediately decorate with Lucky Charms Cereal Topping so they stick to the frosting. Store loosely covered. 

TIPS: A few tips that always make cupcake making a bit easier for me. To make all of the cupcakes a uniform size, I always use a stainless steel cookie scoop for both uniformity and less mess. Make sure to let the cupcakes cool completely, otherwise, the frosting may just melt and runoff. I also squeezed all of the frosting into a small bowl and frosted the cupcakes with my angled icing spatula.

I frosted one cupcake at a time and added the Lucky Charms cereal to the top immediately after so that it sticks to the moist frosting. I stored the fresh cupcakes in a glass cake dome storage on the countertop for everyone to enjoy. 

How do the Lucky Charms cupcakes taste?

Just as you would expect a classic vanilla or white cupcake to taste, the cupcake mix met our expectations. We baked them to perfection, per the directions, so they were moist.

As I mention below, we would have enjoyed more frosting for each of our cupcakes, but the taste and texture of the frosting made it easy to spread and tasted delicious. We each had a cupcake right after adding the cereal topping and was the best addition to each cupcake, a wonderful amount of crunch to the top.

As I stored the other cupcakes under a glass cake dome for several hours, we decided to have another for an after dinner treat. Unfortunately, the cereal had lost it’s crunch and the marshmallows were extra soft. It’s possible had I not covered them at all, they would have kept their crunch and texture. 

Overall, the cupcake mix made the perfect amount and size for 12 regular cupcakes. Our box contained a few extra cupcake liners, but we’re unsure if that’s standard. There was plenty of cereal topping for all 12 cupcakes. I didn’t think the frosting included was going to be enough for all of the cupcakes. Generally I like a lot of frosting on my cupcakes, but included was enough for about 2 teaspoons per cupcake.

We definitely would have preferred even double that ourselves but not everyone maybe loves frosting as much as we do. With the cereal topping losing its crunch after a few hours, I would recommend frosting and adding the cereal topping just before serving if possible. 

Where can I find the Lucky Charms Cupcake Kit?

I found the kit in the Spring/Easter section of my local Target for $4.99. If you can’t find it in that section, it’s also likely to be in the baking/cupcake aisle of your local store.
