These Easy Hedgehog Cupcakes are such a cute and delicious treat! Perfect for birthdays or a fun snack for the kids!

It’s safe to say that everyone loves cupcakes so we decided to make these cute hedgehog cupcakes! When you can make cupcakes using a cake mix, it makes it a totally simple and easy process for all! Fewer steps and ingredients mean less stress in the kitchen and cupcakes in hand quicker!

The kids love that these cupcakes are delicious AND cute, and I have to say that I agree. They’re a fun treat for the weekend or great as an afternoon snack. I also think that these would be super cute at baby showers, hedgehog animal-themed birthday parties, and more!

How do you know when cupcakes are done baking?

The last thing that you want to have happened is to have your cupcakes not cooked all the way. The easiest way to combat this is to use a toothpick as your tester.

Take a clean toothpick and insert it into the middle of one of the baked cupcakes. If the toothpick comes out clean without any batter, this is proof that the cupcakes are cooked all the way through.

How long do you want to start icing baked cupcakes?

Icing cupcakes takes a bit of patience. The cooked cupcakes need to be cooled completely before you start decorating with frosting.

Once they’re cooled, you can start the process and rest easy knowing that the icing will stay in place and not melt off due to the radiating heat from the cupcakes.

Salted caramel frosting

How do you store leftover cupcakes?

The last thing that you want is dried-out cupcakes! To combat that from happening, store any leftovers in an airtight container.

You don’t have to keep these in the fridge, but you can if you want. Room temperature will work just fine.

Can you freeze baked cupcakes?

You can. I recommend freezing them once they’ve cooled down. Store them in a freezer-safe container or bag and get out as much air as possible.

You also don’t want to freeze them after decorating them, in my opinion. You can always add the frosting and decoration fresh once you unthaw them later down the road.

Tips for Decorating Cupcakes

You’ll find the decorating instructions listed below but don’t forget to let the kids have fun as well. This is a great way for the kids to be creative and make their hedgehog cupcakes look any way that they want!

Each completed cupcake will look differently if everyone joins in on the fun and this is all part of the process. I have such fond memories of baking and decorating my own sweets and treats growing up that I love it when the kids can do that now as well.

These cake mix cupcakes are fast and easy to make and are a great dessert to make with the kids.

Ingredients

1 cake mix (plus ingredients listed on the bag of the box)
brown frosting
chocolate frosting
salted caramel frosting
edible sugar eyes (optional)
edible gold glitter

Instructions

Bake the cupcakes according to the directions on the box. Let them cool completely.
Pipe a half circle shape with the salted caramel frosting at the bottom of the cupcake to form the face of hte hedgehog.
Use the light brown frosting to pipe on the fur.
Pipe chocolate frosting eyes and a nose .
Sprinkle the edible glitter lightly over the fur.
