If you’re a fan of the Minions you will love making these super easy and cute Minion Cupcakes. They are perfect for watching a Minion movie together and simple enough for kids to make!

My 4 year old son @DashBakesTheGreats loves the Minions and with the Rise of Gru out, we thought it’d be fun to make these easy and cute Minion cupcakes! We used ready-made store-bought ingredients to make these to show how simple the decorating can be for kids. But of course, as with all our cupcake recipes, you can always opt to use your favorite homemade cupcake recipes or a cake mix! We’ve done both depending on how much time we’ve had and either way the fun part is the decorating and frosting!

Who inspired these Minion Cupcakes?

One of Dash’s favorite baker crushes is Rosanna Pansino and we were inspired to make these based on her Minion Cupcakes from Despicables Me movie. on YouTube.

We tweaked the recipe to make it more kid-friendly. We used store-bought cupcakes, whipped topping for the icing, candy eyes and black gel icing. The hair are black Jimmie sprinkles and of course, don’t forget the Twinkies! 

Can I use homemade icing and cupcakes?

You sure can! Sometimes when the focus is purely on decorating we use store-bought cupcakes and wipe off the plain frosting and add our own. In this case we used Cool Whip tinted with blue gel food coloring but you can use fresh whipped cream, or your favorite homemade vanilla frosting. 

Another trick we use is taking a plain white or yellow cake mix, making lots of cupcakes and freezing them in gallon-sized zipper bags. This way we can always reach into our freezer if we need plain cupcakes to decorate!

What can I use for the Minion eyes?

We used candy googly eyes because they are easy for kids to put on and readily available. But you can also take a mini marshmallow and cut it and add black icing eye details. 

Same thing for the Minion hair, we used 3 black sprinkle Jimmies, but you can also pipe on black gel icing instead!

Easy Minion Cupcakes – Ingredients:

  • Plain cupcakes (use store bought or make your own from a cake mix or homemade)
  • Whipped topping or frosting 
  • Blue gel food coloring
  • Back gel icing
  • Candy eyes
  • Twinkies
  • Black sprinkle Jimmies

Ingredients
  

  • Plain cupcakes (use store bought or make your own from a cake mix or homemade)
  • Whipped topping or frosting 
  • Blue gel food coloring
  • Black gel icing
  • Candy eyes
  • Twinkies
  • Black sprinkle Jimmies

Instructions
 

  • Tint your whipped topping or icing blue with your blue gel food coloring.
  • Add your icing to a piping bag and pipe onto your cupcakes. We used a star tip but if you don't have a tip, just cut a hole from a ziper bag and pipe!
  • Cut your Twinkies in half. Use your black gel icing to decorate the black outliens for the "goggles."
  • Add your candy eyes inside the black goggles.
  • Add 3 black jimmie sprinkles for hair. Or use more black gel icing to make hair on top of your twinkie.
  • Add your Twinkies on top of the piped cupcakes.
