As a self-proclaimed breakfast aficionado, I’m always on the hunt for ingenious ways to up my morning game. And that’s when TikTok, the ultimate trove of food hacks, served up a game-changing breakfast tip that had me flipping out (pun intended) — ice cube tray pancakes! In our time-crunched lives, the idea of having ready-to-cook pancake bites seemed too perfect to be true, and I knew I had to put it to the test.

These frozen pancakes prepped ahead in an ice cube tray will save you when the morning is hectic and the kids are at your feet wanting breakfast pronto! Usually, these days are when the cold cereal comes out, but then I remember the stash of frozen pancakes tucked away in my freezer, and suddenly mornings aren’t so bleak.

How do you make Ice Cube Pancakes?

The method couldn’t be simpler: whip up your go-to pancake mix, fill those ice cube trays with the batter, and toss in your favorite toppings (think berries, chocolate chips, or sliced bananas). Freeze them for a future pancake fix without the fuss of measuring, whisking, or cleaning up a storm.

When the pancake hankering hits, pluck a few batter cubes from the tray, sizzle them on a greased pan over low heat, flip once, and voilà — a mouthwatering pancake breakfast is served.

Can you freeze pancake batter in ice cube trays?

After trying this TikTok hack, we can resoundingly attest that you can in fact freeze pancake batter ahead of time. This makes me excited for the future possibilities of freezing other items in ice cube trays like cake mix or muffin mix. 

I know you can freeze baked goods that have already been baked but there is something about the fresh baked smell and freshness of something straight from the oven that’s way more appealing than taking it out of a zipper bag frozen. 

How long can you freeze pancake batter?

If you look at the comments in the original TikTok video, the recommended freeze time is no longer than 3 months but best within 1 month. We made and ate these within the month and can attest they taste really good in that length of time. As a rule of thumb, I don’t freeze food for more than 3 months that is made from home (e.g. not processed commercially and bought in the freezer section of a supermarket) as those foods generally can last longer in the freezer.

  • Your favorite pancake batter
  • Ice cube tray (or silicone cubed tray)
  • Toppings like berries, bananas and chocolate chips

Ingredients
  

  • Your favorite pancake batter
  • Ice cube tray (or silicone cubed tray)
  • Toppings like berries, bananas and chocolate chips 

Instructions
 

  • Prepare your favorite pancake mix. Homemade or boxed is fine!
  • Pour batter 3/4 full into an ice cube tray or silicone cubed tray.
  • Top with your favorite toppings. We used strawberries, raspberries, blackberries, bananas and chocolate chips.
  • Freeze tray until the cubes are frozen.
  • You can then take them out of the tray and place in a zipper freezer bag or freezer safe container for up to 3 months.
  • Or you can make pancakes. Use a nonstick pan or grease if not nonsitck over low heat.
  • Place a couple of pancake bites on the pan depending on how large your pan is.
  • We recommend placing a lid on top and cooking over low heat so they "melt" evenly. The steam from the lid also helps keeps them moist.
  • Flip once in between cooking. The total time will take 5-6 minutes total but it does depend on the size of your tray so make sure to watch for browning on top as your cue for when they are cooked.
