This Rainbow Fruit Pot of Gold makes a cute treat or healthy snack for kids! It’s also a fun St. Patrick’s Day charcuterie board.
We love St. Patrick’s Day because it gives us an excuse to make cute rainbow treats! This delicious healthy and fresh Rainbow Fruit Pot of Gold is mainly healthy with loads of fruit, but also features a sweet surprise at the end of the rainbow in the form of mini marshmallows and chocolate candy! If you love the trend of charcuterie boards, this is also a simple starter one kids can help make! They can help chop fruits and arrange them into a rainbow.
How do you make this Rainbow Fruit Platter?
To make this fruit pot of gold you just need diced or cut up fruits in all the rainbow colors. We used strawberries, pineapples, oranges, Kiwi fruit, blueberries, and blackberries.
We wanted to make this platter snack-size unlike our larger rainbow fruit and veggie tray so it’s great for just a couple of kids with some sweet treats like marshmallows and mini chocolate Rolos!
Pot Of Gold With Rainbow Fruits – Ingredients
2 cups of strawberries chopped
½ a Pineapple
3 mini Oranges
3 Kiwi
1 cup Blueberries
1 cup Blackberries
2 cups Mini Marshmallows
2 cups Mini Rolo

- 2 Cups Strawberries Chopped
- 1/2 Pineapple Chopped
- 3 Mini Oranges
- 3 Kiwi Chopped
- 1 Cup Blueberies
- 1 Cup Blackberries
- 2 Cups Mini marshmallows
- 2 Cups Mini Rolo
Instructions
- Prepare fruit by washing and peeling as appropriate.

- Add a pile of mini marshmallows on one end of the rainbow and mini chocolate Rolos on the other. You can also substitue other small candies like chocolate coins.
