Are you looking for a fun way to put a new spin on breakfast? My kids are obsessed with this simple pancake treat. While it’s technically a breakfast item, who says you can’t eat them for dinner or even dessert? 

I love that this recipe is fast and easy to make and makes everyone in the family full and happy. I also love that I’m getting some yummy fresh fruit in their bodies, too. 

The kids always get a kick when they hear that we’re having tacos for breakfast and it just makes them that much more excited to eat and join in on the tasty fun.

Can you use frozen pancakes or waffles for this recipe?

You can. If you’re running short on time, you can skip the step of making homemade pancakes and use frozen pancakes instead. We all know that homemade will taste better but frozen works in a pinch! 

What other fruit can you add to this recipe?

Literally, anything that you want. I change up my fruit all the time to be what is fresh and in season. The riper the fruit, the more the flavor. I think that adding in sliced bananas is always a good idea! Kiwis and blackberries also add a ton of flavor and apples can be a big hit, too. 

Pancake Fruit Tacos – Ingredients 

All you need are the ingredients listed below to get started.

  • 1 cup all-purpose flour
  • 1 Tablespoon organic cane sugar
  • 2 Teaspoons baking powder
  • 1/8 Teaspoon salt
  • 1 1/4 Cup plant-based milk
  • 2 Tablespoons apple sauce
  • 1 Teaspoon vanilla

Taco Filling

  • 1 cup blueberries (washed)
  • 1 cup Raspberries (washed)
  • ¼ Cup of chocolate or one chocolate bar of choice
  • 1 Cup Strawberries (washed and halved)
  • 1 cup yogurt (plant-based if vegan)

Once you have all the ingredients, it’s time to get started cooking!

Tips for Making These Pancake Fruit Tacos

While this recipe is simple to do, there are a few tips to keep in mind.

You can make these pancakes non-vegan as well by using regular milk and also using an egg in place of the applesauce. 

When you’re melting the chocolate, be certain that you’re stirring every 30-seconds so that it doesn’t burn.

Pancake Fruit Tacos

Course Breakfast

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon organic cane sugar regular is fine too
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 1/4 cup plant-based milk or use regular milk
  • 2 tablespoons apple sauce
  • 1 teaspoon vanilla

Taco Filling

  • 1 cup blueberries (washed)
  • 1 cup raspberries (washed)
  • 1 cup strawberries (washed and halved)
  • 1 cup yogurt (plant based if vegan)
  • ¼ cup of chocolate or one chocolate bar of choice

Instructions
 

  • Preheat a skillet on medium/low heat.
  • In a medium to large mixing bowl add all of the dry ingredients (flour, sugar, baking powder, salt) and mix well.
  • Add in the wet ingredients (milk, applesauce, vanilla) and mix well.
  • Lightly oil the heated skillet.
  • Scoop out a ¼ cup of the batter and pour into the center of the pan. Cook for 30-60 seconds until you start to see bubbles forming on the top of the batter.
  • Flip over and cook for an additional 30-60 seconds until both sides are golden brown. You may have to cook each side for an additional 30-60 seconds depending on the pan and the temperature.
  • Place on a serving plate.
  • Place the chocolate in a bowl and place in the microwave for 30 seconds at a time and stirring after each round until full melted.
  • To make the pancake tacos simply fold a pancake slightly and add a layer of yogurt, then sprinkle your fruit of choice and drizzle with melted chocolate. Enjoy!
