We love anything pancakes so decided to make these Mini Bunny Pancakes for a cute and healthy Easter treat. There’s a lot of candy in those Easter baskets and so these adorable pancakes are one way to give kids a fun Easter food that’s not overly sugary and sweet.

What do you need to make Bunny Pancakes?

We love making mini pancakes into cute characters like pancake turkeys, pancake owls, and even pancake gnomes! We’ve seen versions of big bunny pancakes but not ones using mini pancakes with are more kid-friendly to eat. We used mini frozen pancakes to make this meal super easy to prep. Of course you can make your own homemade pancakes too. All you need to finish this cute bunny are some whipped cream and coconut for the tail, mini chocolate chips for the paws, and bananas!

What food pairs well with these Easter Pancakes?

Fruit is always a great breakfast companion so we suggest pairing this fun bunny food art with Easter Fruit Eggs! You can slice fruit to resemble Easter eggs and decorate with melted chocolate or yogurt. 

My kids love these bunny pancakes with drizzles of maple syrup and also blueberries. Why not try making a baked oats cake to make this a super festive breakfast since it’s an important holiday. You could even make it a carrot-flavored baked oatmeal cake!

Mini Bunny Pancakes – Ingredients:

  • Frozen Mini Pancakes
  • Mini Chocolate Chips
  • Whipped Cream
  • Shredded coconut
  • Bananas

Ingredients
  

  • Mini Pancakes Frozen or homeamde is fine
  • Mini Chocolate Chips
  • Whipped Cream
  • Shredded coconut
  • Bananas 

Instructions
 

  • For each bunny, you will need 3 mini pancakes. One whole pancake will be the bunny's body, one will be the head, and the third will be the ears and the paws.
  • To make one bunny pancake, place a whole mini pancake on a plate. The cute another pancake into a smaller head and place above as the head.
  • Take the third pancake and create two paws and two floppy pancake ears. Place on your bunny.
  • Add a rounded dollop of whipped cream to the pancake body and top with shredded coconut for the tail.
  • Cut banana slices into two small circles for the paws. We used a pastry tip (large end) to do this but you could just any small round cookie cutter or circle or sharp knife. Place on the pancake legs.
  • Add 3 mini chocolate chips under each banana paw.
