These Mini Halloween Quesadillas make a cute, not too spooky Halloween snack for kids.

Serve them as a festive Halloween lunch or dinner to get the kids fueled up for a fun night of trick or treating.

I’m not gonna lie…Halloween food is so much fun. And in my mind, it’s also a great time for some super simple finger food as well. These unspooky snacks are a perfect treat for the Halloween holiday and honestly, are just so darn cute.
I love them because they’re different than all the other Halloween treats out there; there’s really nothing scary about them. My kids love seeing these cute ghost, pumpkin and mummy faces and and gobble them up as fast as they can.
And while we eat these at home for a snack or dinner, they would be a great lunchbox addition or surprise for Halloween lunch as well.

Can you imagine your little one opening up their lunchbox and seeing these silly snacks staring back at them?! Totally awesome, right?
If you’re looking for a simple Halloween kid-friendly snack that really doesn’t take hardly any time or effort at all, this is the recipe for you. My children will actually eat them cold as well, so I’ve found this to be a really versatile snack.
And if you’re not wanting to make it a surprise, I’m certain that your children will love to get their hands a bit messy to help create these snacks.

What type of cheese would you use to make these mini Halloween Quesadillas?

This all really just depends on what your children like. You can use American cheese slices because they’re easy and square like we did, or you can use shredded cheese as well. If you ask me, you can make any type of cheese that you have on hand work.
If you have a little one that likes things spicy, you can even add a little bit of heat or spicy cheese to this snack, too.
Wouldn’t broccoli or spinach be impressive to make it a bit more ghoulish? Maybe you could even try making a Frankenstein version with green tortilla wraps!

What should I do with the leftover tortilla pieces? 

This is one of the best parts! You can save those leftover cut scraps of tortillas to brush with oil and bake in the oven to make tortilla strips!

It’s a simple reuse of food scraps to make a snack kids love.

We’ve baked these up several times and they’re always a hit. You can eat them plain or dip them in hummus or something else like salsa or cheese dip.

  • Tortillas
  • American Cheese Slices or cheese of your choice
  • Googly Candy Eyes

Simple tips for making these Mini Halloween Quesadillas

If you run into a few roadblocks when making these treats, here are some simple tips that might help!
  • To make the faces, you can use a sharp knife or kitchen shears to cut out the pieces. One other easy way to cut the mummy strips is to use a pizza cutter! We’ve also used a clean Exacto knife to carve out the pumpkin faces!
  • Since these are “mini”, you can get two shapes per regular sized 8″ tortillas if you want
  • Once you bake them in the oven, you’ll notice a bit of the cheese will spread about. Simply take your kitchen shears and trim off once cooled.
  • Once you’ve baked for a few moments and it’s had time to cool outside of the oven, you can then place your candy googly eyes on the mummy.

Mini Halloween Quesadillas

Ingredients
  

  • Tortillas
  • American Cheese Slices
  • Googly Candy Eyes

Instructions
 

  • 1. Preheat oven to 400 degrees.
  • 2. You can make two Halloween mini quesadillas off two standard 8" tortilla.
  • 3. For the ghost, cut out ghost shapes and 2 small circles for eyes and one for mouth. Lay cheese to fit inside and trim excess.
  • 4. For the Jack O' Lanterns, cut out triangles for eyes and mouth as you'd like. We did two as shown. It helps to use a clean Exacto knife for this step! Lay cheese to fit inside and trim excess
  • For the mummy cut out two circles of tortillas. For one, use a knife or pizza cutter to cut strips. Add cheese to one circle and layer the strips. Keep the top open for eyes.
  • Place your mini Halloween quesadillas on a foil or parchment lined baking tray and bake until cheese is bubbly around 8-10 minutes.
  • Remove and allow to cool slightly before serving. Press down your candy googly eyes on the mummy while the cheese is still warm.
