These Mini Oreo Cakes are like mini rainbow cakes that take less than 30 minutes to make, and put a fun twist on classic Oreos, which will leave you begging for more!
Are you an avid Oreo eater? Have you gotten bored with your occasional Oreo snack, and are craving something a little more creative? I’m right there with you. I personally love to eat Oreos, as they’re one of my favorite childhood cookies, and my family does too! However, I sometimes get bored with them and want to switch it up a little. That’s why I created these Mini Oreo Cakes that take less than 30 minutes to make! They are such a fun twist on classic Oreos and fun cakes that kids can make!
How to Make Mini Oreo Cakes
This recipe is so simple, yet so delicious! All you need are 20 double-stuffed Oreos, 1 cup of icing, rainbow sprinkles, and rainbow candies. First, you want to take two Oreos, place a small amount of icing in the middle, and make a sandwich. Then, you want to coat the Oreos with a crumb coat and place them in the freezer for five minutes. Take them out, spread on another coat of icing, and place them back in the freezer for another five minutes. Don’t skip the freezer step, or you will have icing all over the place! After you take them out of the freezer, roll the Oreos in rainbow sprinkles. Lastly, decorate them with some piped icing, and garnish with rainbow candies. It’s that simple!
Mini Oreo Rainbow Cake Variations
If you’re not a huge fan of chocolate Oreos, I totally get it. You can use vanilla, strawberry, peanut butter, mint, etc. to make these Mini Oreo Cakes! It’s totally up to you. Another variation you could do is to choose a fun flavor icing. I chose vanilla icing for this recipe, but other flavors such as chocolate, buttercream, strawberry, or even cream cheese would work perfectly for this recipe!
Another variation you could throw in would be to add different toppings to your Mini Oreo Cakes. Instead of sprinkles, you can be super fancy and add shredded coconut, nuts, chocolate shavings, mini candies, or anything that tickles your fancy!

I personally love this recipe because it checks off all my boxes for fun desserts! First, it’s simple. You only need four ingredients to make this super creative dessert. Plus, you can find everything you need at your local grocery store or on Amazon! Second, it’s quick. If you don’t count the freezer time, the actual prep time for this dessert doesn’t take long at all! If you’re looking for a quick Saturday dessert with a twist, these will definitely become your go-to! Lastly, it’s a great dessert for bringing to parties or special occasions. Because it’s simple and doesn’t take long to make, you can whip these up for any event you might be going to. I especially love to make these during the holidays, because everyone always loves them! It also works great for birthday parties because kids love it!
How to store Mini Oreo Cakes
If you’re not eating the Mini Oreo Cakes right away, I suggest putting them in a large cupcake container a half inch apart, so they don’t get messed up! You can also freeze them for 3-4 months in an airtight container for later. Although, since they’re so delicious, I honestly think they’ll be gone before you can freeze them!
This recipe is such a good dessert because it takes your Oreo game up a notch! Sure, Oreos are tasty, but they taste SO much better with icing and sprinkles all over! Oreo Cake Ingredients:
Double stuffed Oreos (or similar)
White vanilla frosting (or any white frosting)
Rainbow sprinkles
Rainbow candies
Mini Oreo Cakes
Ingredients
- 20 Double Stuffed Oreos
- 1 Cup White Vanilla Frosting May use store bought
- Rainbow Sprinkles
- Rainbow Mini Candies
Instructions
- Take two oreos. Place a small amount of icing in the middle and make a sandwich. Quickly coat the oreos, with a crumb coat (thin layer of frosting) and place them back in the freezer for 5 minutes.
- Remove and spread another layer of frosting. Place back in freezer for 5 minutes.
- Roll in rainbow sprinkles. Don’t skip that freezer step or you will have an icing mess!
- Decorate with a bit of pipped icing if you want, and garnish with rainbow candies.
