I’m always looking for simple Easter desserts. The fun part about this fresh strawberry dessert is that it’s quick, easy, and delicious!

If you want to make a fun spring or Easter treat, we always have a blast with this one. Not only do the kids love to help make it, but they love that it really does look like a carrot patch!

Have the kids be a part of this fun treat – as they can really do a lot of it themselves. They can dip the strawberries, spread the pudding, and crush up the cookies!

What is the easiest way to crush Oreos?

When it comes to crushing the Oreo cookies, there are a couple of different ways that this can happen. The fastest way is to add them to a food processor and pulse them into crumbles.

This also means that you’ll have to wash and clean the food processor, which is an extra step that many people won’t want to do.

You can also add the Oreo cookies to a sealable plastic bag and have the kids roll a rolling pin over the top. This is a fun way for them to be involved in the process.

Can I use different cookies?

Absolutely. I like to use Oreos because they’re dark, like the soil would be in a garden, but you can have fun and change it up to whatever flavor of cookies that you want.

You can also use a different pudding if you want as well. The dark pudding is chocolate that we use because it looks like soil, but if you’re making the dessert, you can change it however you would like.

Variations

Add fun toppings – The best thing about making your own strawberry treat at home is that you can change it to be anything that you want. Grab some gummy worms and put them throughout the “soil” as well!

Mix in some whipped cream – To make the pudding mixture really nice and creamy, add some whipped cream and stir it together.

Freeze it – I love freezing pudding because it creates a harder and more firm texture that melts in your mouth when you take a bite. The fun thing about freezing this is that as it unthaws, it becomes the original dessert that it was supposed to be.

Can I make this treat in advance?

When making this strawberry dessert, the biggest thing to remember is that you can do a little bit of prep work ahead of time. You can coat the strawberries, crush the cookies, and even make the pudding as well.

Putting it all together is probably best to do right before you plan on serving so that the added cookies on top don’t become soggy or sink down into the pudding mixture.

Can I use frozen strawberries?

For this recipe to work, you need to make sure that you use fresh strawberries. Frozen strawberries might have the right shape, but as they thaw, they lose their firmness and also omit a ton of extra juice and water.

This will make the chocolate-covered strawberries extremely messy and potentially even leak that mess down into the rest of the cake as well.

Do I need to remove the strawberry stems?

I don’t because I feel this adds to the look of the strawberry patch. I just make sure that when I’m dipping the strawberries, I don’t dip the leaves and leave them visible.

I also use mint leaves as a garnish to make this Easter dessert look more like a strawberry patch!

What can I use in place of the vines?

If you want to make the strawberry vines something else, you can always use some green string licorice or anything long and green and safe to eat that you can lay in the cookies to make look like a vine.

How to serve

When it comes to dishing out this sweet treat, you can’t really cut it evenly in portions, so grab a spoon and scoop some out!

I typically make sure that each kid has at least 1-2 strawberries on their serving and try to keep it as equal as possible in serving size.

How to clean strawberries

Let the kids be in charge of cleaning the fresh strawberries. They can add them to a strainer and have the water wash over the top.

The strawberries also need to be dry before dipping in candy melt, so once the strawberries are done being washed, have the kids lay them out on a clean towel so that all the water gets soaked off the fresh strawberries.

Do I need to take the cream out of the Oreos before crushing them?

You can! I have an Oreo fan in our house, so the middle of the Oreos will gladly be removed and eaten without worry.

If you don’t remove the middle, then just know that your crushed Oreos will have some white in them. This isn’t a big deal, but some people may not want that to be a focal point in the soil.

These Carrot Patch Strawberries are a super cute Easter dessert or Spring treat!

Ingredients
  

  • fresh strawberries washed and ried
  • Orange candy melts
  • chocolate pudding
  • Oreo cookies
  • Mint leaves (garnish)

Instructions
 

  • Melt the orange melts in a bowl according to the packaging direcitons, and then dip the fresh strawberries into it.
  • Lay the strawberries on parchment paper, and drizzle some excess orange melts on top. Let them firm up.
  • Layer your chocolate pudding to a dish. Smooth over.
  • Crush the Oreos in a food processor, and add over the top of the instant pudding.
  • Add mint leaves and strawberries on top. Enjoy your strawberry carrot patch!
