This won’t take you too much time and is mainly a simple cute pancake shape assembly!

Do I have to make pancakes from scratch to make these caterpillar pancakes?
You can definitely use a mix or our recipe down below. Either way, fr0zen pancakes won’t work here because you will need to tint the mix a light pink. These are Valentine pancakes after all!
Of course you can omit the pink coloring and keep them their natural pancake color. An alternative is to spread some pink frosting on top to get the same look. In that case you can definitely use small frozen pancakes. We’re all about saving time in the kitchen so flexibility and what works for you is the most important thing!
Do I have to use strawberries for the dots?
Well of course not, you can make it a rainbow caterpillar and use different dotted rainbow fruits! We just love the pink theme going on here for Valentine’s Day.
Caterpillar Pancake Recipe – Ingredients:
2 1/4 cups flour
4 tsp. baking powder
3/4 tsp. salt
1 1/2 tbsp. sugar
2 eggs, beaten
2 1/4 c. milk
1/2 c. oil
10-12 strawberries
1/4 cup chocolate chips, melted.
Pink food coloring gel
Instructions:
Sift together flour, baking powder, salt and sugar.
Whisk both eggs then add milk and oil and add all at once to dry ingredients, beating only until moistened.
Add, 4 drops of hot pink food coloring to batter. Pour pancake batter into hot, non stick pan, and flip when tiny bubbles start to form in batter. Makes 12-14 pancakes.
Flip pancakes onto cutting board and cut 6 circles with a 3″ round cookie cutter, set aside.
Prepare 10-12 strawberries and take a knife and slice the strawberries. Take the backside of a piping tip to cut small circles and set aside.
Add your melted chocolate into a small piping bag or a sandwich zipper bag with small tip cut off. Assemble pancakes by laying them side by side and then moving every other pancake up an inch or two.
Cut a small portion of the round pancake out so that it fits neatly next to the other circle pancakes. Add strawberry circles as polka dots and pipe chocolate legs, antennae, eyes, and smile.
