Bunny Chick and Sheep Easter Toast – Ingredients:

English muffins (alternatively, you may use mini bagels)

Cream cheese, softened

Black olives

1 carrot

Chives

Yellow gel food coloring

Slice of ham

Blackberries

Candy googly eyes

To assemble chick:

Use an electric mixer to beat 2-3 oz. cream cheese and 2 small drops gel food coloring. Mix until completely tinted. You can also mix well with a small whisk until well blended.

Use an offset spatula to spread the yellow-tinted cream cheese on half an English muffin.

Cut two small pieces from black olives and place as eyes.

Cut 6 very small carrot sticks from your carrot. Place 3 for each foot.

Grate a small portion of your carrot for chick’s tufted hair.

Cut a small slice of carrot and then cut it further to shape it as a triangle. Place upside down on center of English muffin, this is your chick’s beak.

To assemble rabbit:

Use an offset spatula to spread cream cheese on half an English muffin.

Cut two small pieces from black olives and place as eyes.

Cut a small slice of carrot and use the bottom of a standard-sized icing tip (about ½ an inch in diameter) to cut out rabbit’s nose. Place on center of English muffin.

Cut 6 small pieces of chive – about 3.5 inches in length. Place 3 on either side of your rabbit.

Cut the other half of English muffin further in half. Trim to make it look like rabbit ears. Spread with cream cheese using an offset spatula.

Use kitchen scissors to trim ham so that it’s a smaller version of the English muffin bunny ears. Place one on center of each bunny ear.

To assemble sheep:

Scoop cream cheese in a piping bag and frost out small dollops of cream cheese on half of an English muffin. You can also use a spoon if you don’t have a piping bag, it’s more decorative than functional.

Cut one blackberry in half and place on center of English muffin.

Use a toothpick to place a bit of cream cheese on the back of each candy googly eyes. Place on centered blackberry.

Cut out small pieces of blackberry for sheep’s ears and legs.
